Anoushabour



In Armenia Christmas is celebrated on the 6th of January. On Christmas eve, following the tradition, all the lights in the house are switch off, the whole family makes a prayer, then all the lights are switch on and the whole family sit at the table and share a bowl of anoushabour.

Recipe for 6 people:
  • 110 g hulled wheat kernels
  • 150 g dried apricots, chopped
  • 150 g raisins
  • 100 g caster sugar
  • 1.4 litres of water
  • 1 tablespoon of rose blossom water
Place the wheat kernels in the water to soak for 12h. Place the pot on a gentle heat and allow to cook until the kernels are softened and have leaked their starch. It takes about 2h.

At this point, the mixture should have the consistency of porridge. Add the sugar and the dried fruits. And allow to cook for another 30 minutes. Stir regularly.

Just before serving add the rose blossom water.

Serve lukewarm.
