Halaszle
Traditionally, in Hungary and most of central Europe Christmas dinner starts with a soup. There is a recipe for a fresh water fish soup that will be commonly made in most Hungarian households on Christmas day.
Recipe for 6 people:
- 1000 g different types of small, fresh water fish
- 1500 kg carp
- 2 tablespoons lard
- 2 tablespoons of Hungarian paprika
- 2 large onions
- 1 green chili
- 1 big potato, peeled
- salt and ground black pepper
- 1 tomato, peeled and diced
- 1 egg and 2 tablespoons of flour for the dumplings
In a large pan, heat up the lard and gently sweat off the diced onions.
Sprinkle the onion with the paprika and quickly, pour 3 L of water into the pan to prevent the paprika from burning.
Put the small fish, the diced tomato in the pan and cook it until the flesh comes of the bone.
Strain the stock and bring in to the boil.
Slice the carp and season well. Add them to the fish stock, add the sliced green chili, check the seasoning and bring to a gentle simmer.
Grate the potato and add it to the soup. Allow to cook for 1-2 minutes.
Beat up an egg add 1-2 tablespoons of flour and mix it until you get a soft dough.
Make little dumplings with the dough and add them to the simmering soup.Allow to cook for 2-3 minutes.
Serve hot.
Lactose free, nut free, not suitable for pregnant women.
